Asian Noodle Salad
INGREDIENTS
2 tbsp olive oil
2 tbsp ginger
2 cloves garlic
salt & pepper
1/4 c brown sugar
3/4 c rice wine vinegar
9 oz sweet potato glass noodles
8 oz chicken breast
1 1/2 c cilantro
DIRECTIONS
Cook chicken & glass noodles before making dressing. Set aside.
Add olive oil, ginger, garlic, salt, pepper, brown sugar, & rice vinegar. Cook 6-8 minutes, then refrigerate for 15 minutes.
Combine glass noodles, cilantro, chicken, & dressing to a large bowl. Stir and serve.
