Asian Noodle Salad

INGREDIENTS

  • 2 tbsp olive oil

  • 2 tbsp ginger

  • 2 cloves garlic

  • salt & pepper

  • 1/4 c brown sugar

  • 3/4 c rice wine vinegar

  • 9 oz sweet potato glass noodles

  • 8 oz chicken breast

  • 1 1/2 c cilantro

DIRECTIONS

  • Cook chicken & glass noodles before making dressing. Set aside.

  • Add olive oil, ginger, garlic, salt, pepper, brown sugar, & rice vinegar. Cook 6-8 minutes, then refrigerate for 15 minutes.

  • Combine glass noodles, cilantro, chicken, & dressing to a large bowl. Stir and serve.
