GRANOLA - Quick, easy & healthy!

INGREDIENTS

  • 4 cups oats

  • 1/2 cup sunflower seeds

  • 1/2 cup pepitas

  • 1/4 cup chia seeds

  • 2 tsp ground cinnamon

  • 1 tsp salt

  • 1/2 cup melted coconut oil

  • 1/3 cup maple syrup

  • 2 tsp vanilla

  • 2/3 cup flaked coconut

  • 1/2 cup dates

DIRECTIONS

  1. Preheat oven to 350ºF & line a baking sheet with parchment paper

  2. Combine dry ingredients (except flaked coconut & dried fruit) in large mixing bowl & stir

  3. In a separate bowl, combine wet ingredients & mix well

  4. Pour wet into dry ingredients & stir until evenly combined

  5. Spread granola mixture out evenly on a baking sheet & bake for 20 minutes.

  6. Remove baking sheet from oven & add flaked coconut. Bake for 5 more minutes

  7. Remove baking sheet from oven & let cool to room temperature. When cooled, add dried fruit

  8. Eat immediately or store in airtight container for 1 month

  9. ENJOY!
