GRANOLA - Quick, easy & healthy!
INGREDIENTS
4 cups oats
1/2 cup sunflower seeds
1/2 cup pepitas
1/4 cup chia seeds
2 tsp ground cinnamon
1 tsp salt
1/2 cup melted coconut oil
1/3 cup maple syrup
2 tsp vanilla
2/3 cup flaked coconut
1/2 cup dates
DIRECTIONS
Preheat oven to 350ºF & line a baking sheet with parchment paper
Combine dry ingredients (except flaked coconut & dried fruit) in large mixing bowl & stir
In a separate bowl, combine wet ingredients & mix well
Pour wet into dry ingredients & stir until evenly combined
Spread granola mixture out evenly on a baking sheet & bake for 20 minutes.
Remove baking sheet from oven & add flaked coconut. Bake for 5 more minutes
Remove baking sheet from oven & let cool to room temperature. When cooled, add dried fruit
Eat immediately or store in airtight container for 1 month
