VIDEO & RECIPE - Cooking with Vigo - Episode 13: veggie burger
VEGGIE BURGER - Ok, it’s not a real burger, but it’s delicious!
INGREDIENTS
2 cups cooked & mashed sweet potato
1 cup cooked wild rice
1 cup black beans (rinsed & drained)
1/2 cup almond meal
1/2 cup chopped green onion
2 tsp cumin
1 tsp paprika
1 tbsp brown sugar
salt & pepper (to taste)
DIRECTIONS
Pre-heat oven to 575ºF
Combine sweet potato, rice, beans, almond meal, green onion & mix well
Add cumin, paprika, brown sugar, salt & pepper & mix again
Line a baking sheet with parchment paper
Using a nonstick egg ring fill with the veggie burger mix on the baking sheet, lift & repeat (should make 6 patties)
Bake for 45 minutes (flip after 20 minutes to ensure even cooking)
Serve on your favorite bun with parsley, avocado & tomato
Store extras in fridge for 2-3 days or freeze for long term storage
