VEGGIE BURGER - Ok, it’s not a real burger, but it’s delicious!

INGREDIENTS

  • 2 cups cooked & mashed sweet potato

  • 1 cup cooked wild rice

  • 1 cup black beans (rinsed & drained)

  • 1/2 cup almond meal

  • 1/2 cup chopped green onion

  • 2 tsp cumin

  • 1 tsp paprika

  • 1 tbsp brown sugar

  • salt & pepper (to taste)

DIRECTIONS

  1. Pre-heat oven to 575ºF

  2. Combine sweet potato, rice, beans, almond meal, green onion & mix well

  3. Add cumin, paprika, brown sugar, salt & pepper & mix again

  4. Line a baking sheet with parchment paper

  5. Using a nonstick egg ring fill with the veggie burger mix on the baking sheet, lift & repeat (should make 6 patties)

  6. Bake for 45 minutes (flip after 20 minutes to ensure even cooking)

  7. Serve on your favorite bun with parsley, avocado & tomato

  8. Store extras in fridge for 2-3 days or freeze for long term storage
